Skinny Banana Bread

This easy healthy banana bread recipe is low-sugar and no-oil, and contains just over 100 calories per piece. You still get moist, delicious, and perfectly sweet bread.

Ingredients
  

  • 4 bananas about 1 ⅓ cups, mashed
  • 1 tbsp vanilla extract
  • 2 tbsp granulated sugar
  • 3 tbsp light brown sugar
  • 1 large egg
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter melted
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups all-purpose flour white or white-whole wheat

Method
 

  1. Grease a 9x5" loaf-pan. I also like parchment paper for the bottom to prevent the loaf from sticking to the pan). Mash bananas in a mixing-bowl. Add egg, brown sugar, vanilla, cinnamon and granulated-sugar together. Stir well to combine.
  2. In a small bowl combine flour, salt, baking powder and baking soda. Add to banana mixture and stir to combine. Gently stir in melted butter and bake at 350°F for 35-45 mins or till a toothpick inserted in the middle comes out clean.
  3. Let the pan cool for between 5-10 minutes, before inverting onto a wire cooling rack.
