In a cast iron-skillet, heat the olive-oil on medium-high-heat.
Add the ground-turkey and garlic. Use a wooden-spoon to divide the turkey as it cooks. Stir occasionally and cook for 5minutes.
Add the yellow-peppers and onions, cook till the onions are tender.
Add the red-chili flakes, sweet-potato, pepper and salt.
Cover the skillet and cook till the sweet-potatoes are tender. Do not forget to stir periodically. If needed, add more olive-oil or a tiny bit of water to cook the sweet-potatoes quicker.
While the sweet-potatoes are cooking, preheat the oven to 400ºF.
When the sweet-potatoes are tender, then add the shredded mozzarella-cheese, and set the skillet in the oven to melt the cheese.
Once the cheese melts, remove from the oven and garnish with parsley.
